Profeco Finds Excess Nitrites and Mislabeling in Sausages Sold in Mexico

The consumer agency urges moderation due to nitrite and sodium risks.

Overview

  • Profeco’s lab study of 37 sausage products in Mexico found labeling flaws and excess nitrites in a few items, though all met sanitary and net‑content rules.
  • Three products exceeded the 156 mg/kg nitrite cap, including Bafar Viena at 161.5 mg/kg, Parma Sabori turkey at 207.0 mg/kg, and Bafar Frankfurt at 160.3 mg/kg.
  • Several brands overstated nutrients on the label, with examples such as Bafar Viena declaring 6 g of protein but measuring 4.8 g and Capistrano Clásica declaring 10.04 g but measuring 6.1 g.
  • Some packages highlight turkey despite very low content, as Profeco found around 4% turkey in items marketed by Zwan Premium and Kir.
  • Profeco advises checking dates and ingredients, keeping the cold chain, and limiting intake for people with hypertension, noting sausage mixes often include high water, starches, phosphates, and nitrites to maintain color.
