PopUp Bagels Opens First Chicago Shop in Lincoln Park

The launch tests the chain’s viral, small-batch model in a major Midwest market.

Overview

  • The debut drew a wraparound line in Lincoln Park as the shop served a limited Giardiniera Schmear made with Portillo’s.
  • The counter sits at 2321 N. Lincoln Ave. and runs daily from 7 a.m. to 4 p.m. with catering available.
  • The menu sticks to five bagel flavors (plain, everything, poppyseed, salt, sesame) and a changing lineup of cream cheese and butter schmears.
  • Staff bake hot bagels throughout the day for its “grip, rip and dip” style, and the company says the wait is part of the experience.
  • Founder Adam Goldberg told customers there are no sandwiches or toasting, with new bagels coming out of the oven every five minutes.
