Gideon’s Bakehouse Brings Back Bonnie’s Cookie and Weekend ‘Kris Kringle Bites’ at Disney Springs

The bakery is using short sales windows, two-per-person limits and character merchandise to manage demand and drive repeat visits.

Overview

  • Coverage on July 12 shows Bonnie’s Cookie has returned to Gideon’s Disney Springs locations for a limited run through July 20 and Kris Kringle Bites will be sold on weekends for the rest of July.
  • Bonnie’s Cookie is a lemon-poppyseed style cookie with pockets of white chocolate, topped with lemon butter crumbs and a thin sugar glaze.
  • Kris Kringle Bites are chocolate coffee-bean cookie pieces with coconut, caramel and vanilla notes that are hand-dipped in white chocolate, sold six to a bag on Saturdays and Sundays.
  • Gideon’s has set a two-per-person purchase limit for both items while supplies last, removed Stuart’s Orange Pecan Chocolate Chip Cookie from the mid-July menu, and continues to sell July Stuart & Bonnie merchandise online.
  • The releases follow Gideon’s calendar-driven, short-window strategy that pairs limited food drops with collectible merch to create scarcity, which has led to long lines and frequent sellouts at Disney Springs.
